This month I chose the Gluten Free Goddess herself - Karina from Karina's Kitchen. Karina has an amazing blog filled with great advice, yummy recipes and beautiful pictures! Many of the recipes she posts are for Italian and Mediterranean style food, which I love! She has a wonderfully descriptive way of writing that tells a story about food and always makes me crave whatever she's talking about.
Karina also has a great page about "How to Start Eating Gluten Free" for anyone newly diagnosed or even someone needing a reminder of all you CAN eat on a gf diet.
I found a recipe for foccacia bread that looked too good to be true. This is not the case though, it is so so good. I am definitely adding this to my most loved recipes! The bread is springy with a delicious Italian flavor. I had to make 1 tiny change because I didn't have any tomatoes, so I used Kalamata olives on top of my bread - along with the fresh garlic. And just because Karina had a picture of hers before putting it in the oven, this is what mine looked like:
