When I lived at home, my dad was responsible for the Saturday (or Sunday) morning pancakes and he still is when we visit. I loved those pancakes! The recipe is simple and they turn out fluffy with a little bit of crisp on the outside and a light sweetness that works perfectly with the syrup. Yummy!
Since there is an almost equal amount of flour to liquids and 2 Tbls of baking powder for lift, I thought this recipe might be a good one to try with a gluten free flour blend. And it was! The pancakes were beautifully golden brown with a light airy texture. They were just a little dry, but the addition of syrup was perfect to take care of that! I think next time I may try adding an additional egg, or some egg replacer. I had to do a little experimenting with the right amount of flour because the batter was too runny, but the addition of another 1/2 cup got it to just the right consistency.
Dad's Pancakes Modified
1 1/2 cups gluten free flour mix (I used a millet blend - recipe given below)
2 Tbls sugar
2 Tbls baking powder (gluten free)
1 egg (I'm going to try 2 next time)
1 cup milk
2 Tbls vegetable oil
1/2 tsp vanilla
Mix all ingredients together with a wisk. Heat griddle or pan to medium heat. Melt butter (or use cooking spray, or vegetable oil) onto griddle or pan and spread around until all the cooking area is covered. I love to use butter because it gets the flavor into the pancakes. Pour batter onto hot cooking surface until it reaches the size you like (we like small pancakes at our house). Cook until pancakes just start to bubble, flip and cook the other side until steam starts to rise from the pancakes. Or just check to see when they turn golden brown. Enjoy!
All Purpose Millet Blend
2 cups millet flour
2/3 cup potato starch
1/3 tapioca starch
We were at my parents house this weekend because we went to the football game on Saturday. My mom decided that she wanted (my dad) to fix pancakes on Sunday morning. She bought the Bob's Red Mill pancake mix and it was delicious! It has sorghum flour in it, which I love, so I'm going to try my homemade recipe with that next time. I used millet because I have a ton of it right now and it works really well in all the recipes I've tried so far.
