Seamaiden at Book of Yum is hosting this month's Adopt a Gluten Free Blogger. A big "Thanks!" to her! This is the second themed version and the theme for this month is Thanksgiving Holiday foods.
For this Holiday Edition of Adopt a GF Blogger I chose Ellen of I Am Gluten Free. She has a wonderful blog! I love to read her take on what she is cooking. She always has great notes on how the recipe was changed, or what the dough is like, or a technique that worked (or didn't!).
I wanted to make something for that post-Holiday vacation morning. You know the one, the rush is over, meals are easier because they can be made from leftovers, everyone wants to be lazy before they have to return to work and you want something warm and homey and comforting for breakfast. At my house growing up we always had caramel pecan rolls or sour cream coffee cake (note to self: I've got to work on de-glutening that recipe!) Ellen's recipe for The Cinnamon Roll of Your Dreams caught my eye; actually it was the picture. The rolls looked so airy and gooey and delicious my mouth was actually watering from the picture!
So I made them and I'm pretty sure I could have eaten the whole pan by myself! But I shared and the opinion was unanimous, these will be made again and again at our house! These cinnamon rolls are indeed light and fluffy with a wonderful sweet caramelly-cinnamon flavor.
These are indeed the cinnamon rolls of my dreams and they are very easy to make, especially using the rolling technique that Ellen links to in her post (my pictures of the process are below). The dough is very sticky, so I recommend spraying your hands with a little non-stick spray or rubbing a little butter/shortening over them. If the dough sticks too much the rolls will fall apart when transferring them to the baking dish.
