I love toast! It's great for breakfast or a late night snack. It's sometimes the only thing I want to eat when I'm not feeling so great. It's hard to eat eggs without something to mop up the yolk or pile high with the scrambled variety. But good gf bread is hard to come by. Yes, most do taste better toasted, but they're still not great toast! And they certainly aren't worthy of a good roast beef sandwich!
I think I've finally done it - a really great sandwich bread, just how I like it. This bread is wonderful, it actually tastes just like whole grain wheat bread. It has a soft inside with a great crust and can be eaten as is, or toasted with your favorite toppings. And it stayed on my counter for 3 days and didn't get dry, crumbly or mushy. I used teff flour in this recipe which, I think, gives it that great "whole wheat" flavor.
Gluten Free Sandwich Bread
1 1/2 cup warm water
2 1/2 tsp (1 package) yeast
3 tsp sugar
1 cup millet flour
1/2 cup teff flour
1/2 cup rice flour (brown or white)
3/4 cup potato starch
1/4 cup tapioca starch
1 tsp salt
2 1/2 tsp xanthan gum
2 Tbls flax meal
1 Tbls egg replacer
4 Tbls butter, melted
3 eggs - put these in a bowl of warm water to get them to room temperature
1 tsp apple cider vinegar
Add 1 tsp sugar and the yeast the warm water and let it sit and proof for 5-10 minutes.
In the bowl of your mixer, stir together the flours, remaining 2 tsp sugar, salt, xanthan gum, flax meal and egg replacer.
Add in the melted butter, eggs and apple cider vinegar and stir well.
Add in the proofed yeast mixture and mix until incorporated. Turn the mixer up to medium high speed and mix for 5 minutes.
Pour bread dough into a greased bread pan. Cover with a soft towel and let the dough rise in a warm place for 30-40 minutes. Bake in a 350 degree oven for about 40 minutes, until the crust is browned and the bread sounds hollow when you tap the top. Cool in the pan for 10 minutes and then remove to a wire rack to cool completely.
