This is my version of a delicious gluten free salad I had at a lovely cafe just down the street from where I work. The cafe is great because they make everything from scratch and the chef knows every ingredient that goes into his recipes. They can easily tell me what is gluten free and what isn't, or how they can change a dish to make it gluten free.
I didn't have any left over chicken, but that would be great in this salad. Also green beans would be a good addition.
I roasted some potatoes in olive oil and Herbs de Provence until crispy and golden brown. I tossed the potatoes with a mixed baby greens salad and poured the Stone Ground Mustard Dressing over the top. Yum!
Stone Ground Mustard Dressing
2 Tbls stone ground mustard
2 tsp mayonnaise
1-2 tsp red wine vinegar
1/2 tsp honey
Salt and pepper to taste
Mix all the ingredients together well. Add a little bit of water for a thinner consistency. Pour over salad. Enjoy!
