One of the reasons I have about 15 different kinds of flours in my pantry and freezer is because most of the gluten free flour mixes out there are heavy on the refined flours and starches and very light on whole grains. Before being diagnosed with Celiac Disease I liked to incorporate whole wheat flour every chance I could get. I loved the taste of whole wheat bread and I liked the nutritional value whole grains offered. Now I like to use millet, sorghum and teff in my baking.
Apparently many people feel the way I do. ConAgra has listened! They released a new gluten free whole grain flour mix last year (I'm a little late to the party). According to their press release the "multigrain flour is a proprietary blend of ConAgra Mills Ancient Grains and tapioca flour formulated to achieve optimal functionality with the whole grain nutrition, fiber, appearance, texture and flavor customers crave". Their Ancient Grains line includes millet, sorghum, teff, amaranth and quinoa. What I'm not sure about is if this flour mix is going to be available to the general consumer. On the press release there is a lot of talk about commercial uses for this product and I have yet to find a store (online or otherwise) that actually sells it. Does anyone know more about this product?
