This is a tasty and easy recipe that I got from Jill (Hey, that tastes good!). Go visit her website if you haven't already, she has a ton of wonderfully delicious recipes! I changed a few of the ingredients, but it still has the same basics. The flavor is delicious! I couldn't stop eating it; I had to make myself put the leftovers away for lunch the next day! The Girl didn't want to try it ("peanut butter chicken - gross"), but the Boy loved it! It's a bit spicy, so it goes well served with rice.
Thai Peanut Chicken

1 small onion, diced
4 cloves garlic, minced
1 1/2 lbs chicken breast, cut in thin slices
2 tsp oil
1/2 cup smooth peanut butter
1 Tbls lemon juice
3 Tbls soy sauce
2 Tbls honey
2 tsp chili garlic sauce
1 tsp fish sauce
1/2 cup water
10 oz frozen chopped spinach, thawed and drained
chopped peanuts for garnish
Heat the oil over medium high heat. Add chopped onion and saute for 3-4 minutes, add garlic and saute 1 more minute.
Add the chicken and cook until the chicken is starting to brown.
Stir together the sauce ingredients (peanut butter, lemon juice, soy sauce, honey, chili garlic sauce, fish sauce and water). Pour over chicken and stir to coat. Let the chicken cook in the sauce until it is cooked through and the sauce thickens, about 10 minutes. Add in the spinach and cook 1-2 minutes more until everything is hot.
Serve over rice with chopped peanuts sprinkled on top.
