Here is a delicious recipe for using left over red wine - or open a new bottle and drink it with dinner! And you can make it in the crockpot, so it's really easy!
Red Wine Beef Roast
2-3 lb beef roast
3 carrots, peeled and sliced into coins
1 small onion, cut into chunks
3-4 yukon gold potatoes, cut into chunks (I used 3 medium size ones)
1/2 cup beef broth
1 cup red wine
2 tsp oregano
2 Tbls cornstarch
salt/pepper to taste
Place the roast in your crockpot (season with salt and pepper) and add the carrots, potatoes and onions all around it.
Mix together the broth, wine, oregano and cornstarch and pour it over the beef and veggies.
Cook on low for 8 hours, or more.
The leftovers were even better reheated on the stove a few days later!
